Zucchini Bread

Makes 2 Loaves

Pre-heat oven to 325 ~ Bake in greased loaf pan ~1 hour

 Cream together: 3 eggs & 2 and 1/4 cup of sugar

Add: 3 cups of flour, 1 tsp baking soda, 1 tsp salt, 1/2 tsp baking powder, 2 tsp cinnamon, 1 cup oil ~ Set aside

In a blender puree peeled zucchini to make 2 cups mush, add to first mixture ~ Still well

Bake ~ Test with toothpick

 Baked loaves can be wrapped in foil and frozen or 2 cup portions of  zucchini mush can be frozen in ziplock bags for future baking.
