Spaghetti Sauce

Wash Roma tomatoes ~ Slice small X’s in the bottom of each ~ Add to boiling water, boil until skins split ~ Drain and cool

If using meat: Cook hamburg, chorizo or meatballs ~ Set aside

Chop mushrooms, carrots, green peppers, jalapeno pepper, onions, garlic, basil

Skin, trim and slice tomatoes ~ Add back to pot ~ Add sugar to reduce acidity, add fresh basil (and other Italian seasonings like parsley, bay leaves and oregano to taste) ~ Add meat ~ Simmer on low heat

Saute garlic and onions in 2 tbsp oil ~ add carrots, cook for 3-5 minutes ~ add peppers and mushrooms ~ saute until veggies are cooked

Add veggies to tomato sauce and simmer on low until all flavors meld

Serve fresh from the stove or freeze
