Butternut Squash Ravioli w Scollops in a Brown Butter

This is a dish I had out a few years ago and fell in love with it!!  I’ve made it at home a couple of times and it came out pretty good.  I’ve just started to experiment with making my own ravilois but you can find butternut ravs pretty much anywhere now.

Like all my recipes, this is a loose rendition 😛  But mostly because I recreated it from memory so basically I made it up as I went (and haven’t made it since last Spring)

Cook ravioli according to package, set aside

Brown some butter in a saute pan, add a sprinkle of brown sugar

Pan sear scallops until no longer translucent, about 3 minutes each side (?) adding a little butter and brown sugar to keep the sauce going

add craisins, pour scallops and butter over raviolis

(I just remembered the original dish also had cubed butternut, I guess you could cook these first in the same manner as the scallops and set aside with the ravioli)
