Recipe: Pasta Salad

Pasta Salad


1/4 cup Olive oil
Red bell peppers, quartered
Yellow squash or zucchini, cut on the diagonal into 1/2-inch slices
Fusilli pasta, cooked, drained and cooled
Baby spinach leaves
Fresh mozzarella balls, halved
Grape tomatoes, halved
Red onion, thinly sliced
Chopped fresh basil
1/4 cup white balsamic vinaigrette
1/4 cup olive oil
Salt & Pepper


Preheat oven to 350°
Put squash and peppers in ziplock bag, add olive oil, and spices. Shake to coat.
Grill, flipping once, until just charred in parts and tender.
Transfer to a plate and set aside to let cool.
In a large bowl, toss grilled vegetables with pasta, spinach, mozzarella, tomatoes, basil, vinaigrette, salt and pepper.
